Husband approved gluten free brownie mix

During my grocery trip yesterday, I decided to pick up a gluten free brownie mix. Honestly, I just picked up the cheapest box and hoped for the best. Luckily for me, they were amazing! I gave one to Drew fresh out of the oven, and he couldn't even tell they were "off" in any way.
After making and tasting these brownies, I was searching online for articles that had tested different boxed mixes of gf brownies. This article made me laugh and also listed the Betty Crocker gf brownies as the best. In fact, in a blind test, the gf brownies were were found to be just as good as the Betty Crocker regular mix.

Although the box looks different now, I agree with the review:
I don't have a brownie pan (ridiculous) so I used an 8 inch cake pan and it worked fine. It made it easy to slice into little wedges. The entire pan of brownies is almost gone. I will have to buy another box!

Today for lunch I had a salad topped with a crumbled turkey burger, a little cheese, and sweet onion dressing on the side. I also had some rice crisps (these were nasty), and a brownie. Drew and I were both home because of the temps (High of -6 low of -17, windchills were below -40!!) and I will be home again tomorrow. I am still enjoying the extra time off!
What was your favorite meal today?
What is the temperature where you are?

  1. We're out again tomorrow too. That's good because I'm not able to get down my road here in the middle of nowhere land.

I was glad to read your review of Shakeology. I have not tried it and I'm loving the shakes on the 24 day challenge. I haven't lost much weight while on the challenge, but my energy is through the roof! I love that part!

I haven't tried any of the GF baked goods. I did give up gluten this fall (before Christmas- since then not so much). I felt a lot less sluggish, bloated, and had less inflammation. I try not to eat dairy at all because I'm allergic- it does make me inflamed and irritates my asthma. Eliminating gluten and sugar was another step in the right direction for me but it's not easy. I like food too much!

Sounds like you're headed in the right direction. I enjoy your blog :)

I read and appreciate every one of your comments! Thanks for stopping by. I try to read and respond to every little note or question left here. They make me smile :)
