Gluten Free Parmesan Baked Chicken Tenders

I tried out gluten free bread today in my lunch. I was so excited to try eating a sandwich again! It came frozen, so I let two pieces thaw and added turkey for a sandwich. I opened up my lunchbox ready to give it a try. As soon as I took a small bite, my mouth was sucked dry by this terrible bread. I started laughing but couldn't breathe at the same time. It was quite a sight, let me tell you. I immediately threw the rest away.
Would NOT recommend this bread!
The loaf was expensive, so I knew I had to use it up somehow. I decided to take a piece and make bread crumbs. It worked perfectly, since the bread was SO dry! I just threw some ingredients together, and Drew and I agreed these were the best chicken tenders I've ever made. You must try them! (if you are not gluten free, you can of course use regular bread crumbs!)

Preheat oven to 350º. Crack open egg onto a shallow plate or bowl and whisk until scrambled.. Set aside. In separate shallow plate, combine bread crumbs, parmesan, and seasonings. Set aside.

 Dip each chicken tender into the egg until well coated.
 Transfer to breadcrumb mixture.
Coat the tender well with the breadcrumb mixture. 
Shake off excess breadcrumbs, and place on a baking sheet sprayed with cooking spray or on a silpat mat. 
Repeat with remaining tenders. Bake at 350º for 25 minutes. 

Best when served with garlic smashed potatoes and green beans. ;) 

Ingredients

1 lb boneless skinless chicken tenders
1 piece Rudi's gluten free bread, ground into crumbs (or 1 cup bread crumbs)
1 egg
1 tablespoon garlic salt
1 teaspoon ground pepper
1/4 teaspoon red pepper flakes
1 teaspoon chili powder
1 tablespoon Italian seasoning
1/4 cup parmesan cheese

Directions
